Homefed Friday: Beer Cheese Fondue

This fondue recipe has become a tradition to serve while trimming our Christmas tree. Try this crowd-pleasing recipe at your next holiday gathering or tree trimming party, it’s a fun dish to share and it’s sure to become a tradition in your home. 

Ingredients

  • ½ lb sharp cheddar cheese
  • ½ lb gruyère cheese
  • 1 tbsp cornstarch
  • 1 clove garlic, finely chopped
  • 1 tsp dry mustard
  • 2 teaspoons Pickapeppa sauce (or Worcestershire sauce)
  • 1 cup Island Coastal Lager beer
  • Fresh cracked pepper to taste
  • Milk if needed to thin it out

Instructions

Grate cheese in a small bowl and add tbsp cornstarch, set aside. In a pot, add the crushed garlic, cook for 1 minute over medium/low heat (be careful not to burn garlic). Add dry mustard, Pickapeppa sauce (or Worcestershire sauce) and beer. Heat to a low simmer, add 1/3 of the cheese and whisk very well. Once the cheese has been incorporated, continue to whisk in the remaining cheese. Whisk until the cheese is smooth and season with cracked black pepper. If you prefer a thinner cheese consistency, use 1-2 tablespoons of milk to thin fondue out. Serve with cubed sourdough and veggies.
