Homefed Friday: Grilled Citrus Chicken Sammie with Chimichurri Sauce

Possibly the best chicken sandwich you ever put in your mouth!

This lemon marinaded chicken pairs perfect with chimichurri sauce. The avocado’s fatty buttery texture is a perfect topping to this sammie to help round out the citrusy-garlicky-spicy flavors…kiss to the chef!!

Ingredients 

  • 1/2 cup orange juice
  • 1/2 can of Island Lemonada
  • 1/4 olive oil
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 2 tbsp minced garlic 
  • Zest of 1 lemon
  • 4 Chicken Breasts
  • Lettuce
  • Tomato (sliced)
  • Red Onion (sliced)
  • Avocado (sliced) 
  • Monterey cheese (sliced)
  • 4 Ciabatta rolls

 Chimichurri Sauce:

  • 1 bunch of parsley, chopped  
  • 1 tbsp dried oregano
  • 1 red chili, finely chopped
  • 3 tbsp minced garlic
  • 1/4 cup of olive oil
  • 3 tbsp red wine vinegar


Instructions 

  1. Mix orange juice through lemon zest, place chicken in zip lock bag with marinade, marinate for at least one hour or up to 24 hours. 
  2. Mix all ingredients together for chimichurri sauce, parsley through salt.
  3. Grill the chicken, turning once, until just cooked through, 7 to 8 minutes per side. During the last few minutes of cooking time, top each piece of chicken with a slice of monterey cheese. Brush the insides of the rolls with olive oil, grill the rolls, oiled side down, until warmed and lightly charred, about 1 minute. 
  4. Spread some chimichurri sauce on the top half of the roll. Top bottom half of the roll with lettuce, tomato, onion, chicken and avocado (build in this order). Drizzle with extra chimichurri sauce and the top half of the roll.
